We love this salad for lunch! Ingredients: Serves 3 2 chicken breast Paprika 1/2 cup Sunflower seeds 1 bunch of Green onion 6 mandarin oranges or tangerines 2 heads of cabbage or 2 chopped bags from trader Joe's Dressing: 1/2 cup extra virgin olive oil Zest of orange 2 oranges, squeeze juice in 1/2 tsp. pepper 1/2 tsp. salt 3 Tbsp. apple cider vinegar Directions: 1. Rub chicken with coconut oil and sprinkle with salt, pepper, and paprika. Bake until cooked. Cut chicken into bite sized pieces. 2. If you are a trader joes shopper you can buy 2 bags of their already chopped up cabbage or buy two heads of cabbage core and chop the cabbage into thin pieces. 3. Saute sunflower seeds with coconut oil over medium heat stirring frequently. (If you want to skip this step you can add raw sunflower seeds or be lazy and by a bag of toasted sunflower seeds 😉 4. Combine all of the dressing ingredients together in a container to shake or if needed you can stir in bowl. 5. Chop the green onion into small slices. The more the better! 5. Mix together cabbage, green onions, sunflower seeds in a large bowl. Pour dressing over it and mix until all is well coated. I added a little extra olive oil and sunflower seeds into the salad at the end. More healthy fats the better!
