Shepherd's Pie

Ingredients:
1 onion chopped
2 garlic cloves minced
2 tablespoons coconut oil
1 lb grass fed ground beef
1 can of sweat peas
1 cup cooked green beans (I've used a can before too)
3 large carrots chopped
Handful of broccoli chopped really small (I only chopped the flower part)
1/4 a cup coconut flour
Rosemary to liking.
1/2 a cup beef broth
1 head of cauliflower
Grass fed butter (optional)

Directions:
Preheat Oven to 350
First cut the leaves off the cauliflower and cut the cauliflower in half. Then steam for about 30 min or until cauliflower is soft.

While that is steaming I added coconut oil, onion and garlic on stove and sauted.  Then added in the beef and cooked on stove top and broke into small pieces.  Once beef is cooked I added all the veggies and the beef broth and let simmer on low. While that is simmering I checked on the cauliflower, once cauliflower is soft you then can blend in a blender to make it the consistency of mashed potatoes. You can also put in a bowl and smash it up with a fork.

After the beef and veggies have been simmering for about 10 min I then add the coconut flour and rosemary and mix together.

In a baking dish (I used a 12x5) I added the beef vegetable mixture first flattening it on dish, then sprinkled some coconut flour on top and then added the cauliflower mashed potatoes on top and flattened.

Last I added some grass fed butter and salt to the top of cauliflower potatoes and cooked in oven for about 15 minutes.
