Fish Tacos with Protein Tortillas

Fish Ingredients:
3 mahi mahi filets (Wild Caught)
2 tablespoons coconut oil
2 slices lemon squeezed over fish
lemon pepper

Taco toppings:
1 can black beans
green onion chopped
cilantro chopped
tomatoes chopped
spinach or kale chopped
jalapeño chopped
avacado chopped

Protein Tortilla
5 eggs
2 tablespoons almond meal
1 tablespoon almond flour
little bit of taco seasoning
1 tsp of cumin

Directions for tortillas:

   Place all ingredients in a bowl and mix together. You have to use a non stick pan for this to work well.  I have a horrible non stick so I had to add oil every time so my tortillas wouldn't stick.

   On medium-high heat (let pan get hot first) pour a circle about 4 inches across then spread it bigger to about a size of a tortilla (you want it thin)  Once it is spread on pan let cook on one side for 2 minutes (you want edges to start coming up on the sides) then flip and cook for another minute on other side.  (Its just like making pancakes)

Directions for fish
Pre- heat oven 425 degrees
squeeze lemon over fish
I also put lemon pepper on it
Bake for about 20-25 minutes.

I then cut each fish filet into 3 long pieces to fit in taco.

Chipotles sauce:
1 cup mayonnaise
1 tablespoon lemon juice
2 tsp chipotles chili seasoning
Mix all ingredients together. 

Place fish in tortilla ad sauce and any toppings you like in it.
