Dark Chocolate Coconut Muffins
Ingredients: 1/2 cup coconut flour 1/2 cup shredded coconut 1/4 cup cacao 2 teaspoons baking powder 1/4 cup raw honey 1/4 cup almond butter or peanut butter 2 tablespoons coconut oil melted 2 tablespoons coconut cream 1 cup coconut milk 2 eggs 2 Simply Light Sugar Free Dark Chocolate Bars. I love these because they are sweetened with xylitol. I used a meat tenderizer hammer to brake the bars up into pieces (You can always use dark chocolate chips too) Directions: Pre heat oven to 350 Mix the coconut flour, baking powder, cacao, nut butter and shredded coconut together. Then melt the coconut oil and pour into mixture and mix. Then add the honey, coconut cream , and coconut milk to mixture and mix. The mixture should be cooled off by now from the coconut oil, you then add the eggs and the dark chocolate bars and mix all together. If your mixture is really dry (coconut flour tends to soak everything up) you can always ad more coconut milk to get the batter more moist. Then place cupcake tins into cupcake baking sheet cooked for 15 - 20 minutes or until tooth pick comes out clean. Let cool before eating! I like them best after being in the fridge over night.
