Bellpepper Nachos Bell Pepper Nachos are awesome because you can make any of your favorite nacho recipes but you are going to use bell peppers for your chips. Here is the recipe we used! Ingredients: 4 bell peppers 1 pork shoulder bbq sauce black beans raw cheddar cheese onion jalepeno Instructions: Pre-heat oven to 350 Slow cooker pulled pork: Put Pork in slow cooker for 6-8 hours on high. Once pork is done I mixed BBQ sauce..you may want to skip BBQ sauce if you are watching your sugar intake and season pork with different spices like cumin, ground pepper, paprika minced garlic etc. Cut bellpeppers in chip like pieces( I made them a little bigger) Place on cooking sheet then pile on the pulled pork, black beans, chopped onion, chopped jalapeno, shredded raw Cheddar cheese ( we buy a great raw cheese at Trader Joe's ) Put in oven for 15-20 min. ENJOY!
