![]() Baked Red Curry Coconut Chicken Ingredients 1 lb chicken breast 2 eggs 2 tablespoons thai red curry paste 1 cup almond meal 1 1/2 cups shredded coconut Pre heat oven to 350 degrees Mix the eggs and red curry paste together in a bowl. In another bowl mix together almond meal and coconut mixture. Coat chicken in egg mixture then coat it in the coconut mixture. Place in baking dish. Once all chicken is coated I placed a couple tablespoons of coconut oil in dish and a little extra red curry paste in dish around chicken to add a little more flavor. Bake in oven 20-25 min or until chicken is baked through. Healthy Cauliflower Rice The main spices I used are turmeric and cumin. Some health benefits of turmeric : Improved ability to digest fats Decreased congestion Powerful anti-inflammatory Improves skin conditions such as eczema, psoriasis, and acne. Turmeric also has a healthy amounts of manganese, iron, fiber, vitamin B6, potassium, vitamin C and magnesium. Some health benefits of cumin: Helps digestion Good source of iron and manganese High in antioxidants Helps increase insulin sensitivity Reduces cholesterol Ingredients 2 heads cauliflower 2 cups cranberries 2 cups cashews chopped 3-4 tablespoons grass fed butter or coconut oil Turmeric Cumin Red pepper flakes Pre heat oven to 350 If you have a vitamix you can add about 2 cups of cauliflower and bring to variable 7 to make rice. Don't blend too long or it gets mooshy... Or The hard way is to take a cheese grater and grate the cauliflower into rice. It a a great arm workout! Once cauliflower is rice I placed on a flat baking sheet then added all the ingredients and mixed it in. Cut the butter into small pieces and place all over rice. I seasoned all the cauliflower with turmeric, cumin, red pepper flakes and some sea salt. Place in oven and bake for about 30 min. At 15 min take out of oven mix rice around to make sure it's being cooked evenly. I also added more of the spices to the dish then cooked another 15 min.
