Here is our go to juicing recipe that our daughter loves too! Juicing is an awesome for your body to absorb a lot of nutrients easily. The only thing we recommend is to separate the juice a couple hours from you eating other food or have it as your meal.
3 large carrots
1 large cucumber
beet leaves and stems
4 handfuls kale
4 handfuls spinach
4 pieces of celery
I get about two glasses with this.
In the past month we have decided to change our eating habits. Our goal is to reduce our meat in take to only 7 meals a week with meat in them and 2 of the meat meals have to fish. So basically I found it easiest to eat our meat or fish at dinner and replace our go to salads with chicken we usually eat for lunch for meat free options. We are not fans of soy and of a lot of grain in our diet so we have had to get a little creative.
Here is a spin off of my turkey chili but it is now made with lentils and black beans and lots of veggies.
Lentil and Black Bean Chili
(the more veggies you want to add the better )
2 12 oz jars of any kind of salsa
2 pieces of garlic chopped
2 pieces of celery chopped
2 carrots chopped
3 bell peppers any color chopped
1 large onion chopped
Jalapeño chopped (optional)
1 can of fire roasted diced tomatoes
1 handful of cilantro chopped
2 handfuls of kale chopped
1 can of black beans
1 pouch of lentils (trader joes has them available already cooked, this made it very easy!)
chipotle chili seasoning
Put crock pot on low add all the ingredients then pour salsa and seasoning and mix in. Let cook on low 3-4 hours. Ive also made this on the stove top and let cook on high for about 20 minutes then put in fridge to eat for lunch during the week.
