2 lbs chicken breast
2-3 bell peppers
Handful of cilantro
Can of fire roasted tomatoes with green chili
Can of black beans
1 cup of corn
2 tablespoons coconut oil
3 cups chicken broth
Handful of spinach
slice of an onion
Slice of a red bell pepper
Piece of garlic
1tablespoon taco seasoning
(If you like it spicy you can ad jalapeno)
Bake chicken in oven at 350 with a little water or chicken broth in the pan and bake for about 30 min. Once cooked through you will take a fork and shred the chicken and season to your liking. (Cumin, pepper, taco or fajita seasonings etc.)
Chop up onion, bell peppers, cilantro,garlic and place in crock pot with 2 tablespoons of oil
In a blender you will add all of the broth ingredients and puree. Then pour into crock pot.
Add the shredded chicken, black beans and corn.
Let cook on high for about two hours.
Optional toppings: cheese, avocado and jalapeno.
