Spinach Lasagna

INGREDIENTS:
Small Head of broccoli
1 Can organic tomatoes
2 cans organic tomato sauce
3 tsp minced garlic
1/2 large onion
1 cup mushrooms
1 cup black olives
1 cup mozzarella cheese
1/2 cup cheddar cheese
1/2 cup feta cheese
4 cups torn spinach
2 eggs
2 lbs ground grass feed beef, bison, or ground turkey
Salt to taste
 

Directions
  1. Cook ground meat until cooked.
  2. Heat tomatoes and tomato sauce in a pot on low heat.
  3. Chop onions, mushrooms, olives broccoli into very small pieces and add to the tomato sauce with minced garlic.  Simmer on low until tomatoes have blended in with the tomato sauce.
  4. Once meat is thoroughly cooked put in with tomato sauce.
  5. In a bowl grate all cheeses and mix together with egg and spinach.
  6. In a lasagna pan you will cover bottom with a light layer of sauce.
  7. Then put a layer of cheese, egg and spinach mixture.
  8. Repeat process of sauce and spinach mixture until you have used it all.
  9. Bake at 350 degrees for 40 minutes
  10. Let it cool for 20 minutes.

CrockPot Turkey ChiliĀ

This is one of those recipes where you don't measure much, chop everything up and through together.  The more vegetables the merrier!




Ingredients
2 lbs ground turkey
coconut oil
2 organic bell peppers red, orange or green ( bell peppers are in the dirty dozen so always buy organic!)
1 large onion
3-4 cloves garlic minced
2 12 oz jars of salsa
handful of cilantro chopped
2 handfuls of spinach chopped ( I like to add greens when you cant taste it)
1 jalapeno chopped (if you like it spicy)
seasoning: chipotle chili powder and cumin
optional ingredients: carrots, celery, cheese, avacado

Directions:
 Put your crock pot to low heat and add 2 tablespoons coconut oil minced garlic, chopped onion, chopped bell peppers and any other vegetable you want to put in there..

On stove top crumble turkey and cook through. I add a chipotle seasoning from whole foods and cumin.  About 2 tablespoons of each.

Once meat is cooked through I add the meat to the crock pot and pour 2 jars of salsa over and add remaining ingredients.

  Then you mix all together in the crock pot and let cook 3-4 hours.  I have also made this chili on the stove top and heated all ingredients together if I did not have time to use a crock pot. 

We like to add shredded cheese and avocado to the top!

Honey Cashew Chicken

Ingredients: 
1lb organic chicken breast
1 head Cauliflower 
Coconut Oil 1-2 tablespoons
1/2 cup raw cashews
1 bunch green onions
Couple garlic cloves minced

Sauce
2 tablespoons vinegar
1/4 cup Raw honey 
1/2 cup coconut aminos or braggs liquid aminos
1/4 cup Ketchup
Fresh ginger grated about 2 tsp
Crushed red pepper (the more the spicier)

Instructions
First I made cauliflower rice and put in oven to bake.

While rice is cooking...
Cut up chicken into bite size pieces. Heat coconut oil on stove top and cook chicken. Add the cashews, garlic and onion when chicken is about half way done.

In another pan heat all the sauce ingredients together. Heat for about 5 min stirring.  Once mixed together pour over chicken. Serve with cauliflower rice.
