I love Italian food, and my wife is Italian. So we eat a lot of Pasta! But probably not the pasta that you are thinking of. Last night we had spaghetti, not with noodles. My wife has a spiral slicer that she uses with zucchini and squash to make them look like noodles. Once the sauce and meat is on, you won't miss the noodles. It tastes great, and you are getting vegetables in. She also does this with a spaghetti squash, bake it for 45 mins to an hour and you cut it in half and scrape out the "noodles". If you want bigger noodles for say fettuccine alfredo, you can adjust the spiral slicer for that. Or if you don't have a spiral slicer, you can take a potato peeler to the zucchini. You can use any sauce, my personal favorite is my wifes homemade pesto she makes with fresh basil from our herb garden. Try it, it's easy.
